Imprimerie Royale, 1781. In-8 paperback, period mute cover. First edition, illustrated with a fold-out plate on the grinder-skull for extracting starch from tubers (here formerly canvas-backed). During his captivity in Prussia, Parmentier was able to ascertain that the potato, consumed by most of Europe, was neither unhealthy nor tasteless; on his release, he returned to Paris and obtained the position of assistant apothecary at the Hôpital des Invalides. In 1771, he responded to a competition launched by the Académie de Besançon to find a remedy for famine, with the following statement: "What plants could be substituted for those commonly used in case of famine, and how should they be prepared? ". Of the seven papers submitted, Parmentier's was the most popular. Recherche sur les végétaux nourrissants" is a reworking of the memoir presented to the Académie de Besançon, with additional letters and answers to the 25 most common objections to this tuber at the time. In French, n° 173
